Approximate: the weight of a cup depends on how the ingredient is filled and levelled.
How it works
A cup measures volume, so its weight depends on the ingredient. Weights per US cup come from the King Arthur Baking ingredient weight chart for flours, sugars, cocoa, oats, chocolate chips and butter, and from USDA FoodData Central for milk, oil and honey. Water is taken as 1 gram per millilitre.
A metric cup (250 mL, used in Australia, New Zealand and elsewhere) holds about 5.7% more than a US cup, and the weight is scaled to match.
These are typical values. Spooning flour into the cup gives less than scooping it, so weigh ingredients when precision matters.
Formula
Grams = cups × grams per US cup × (cup volume ÷ 236.5882365 mL) Cups = grams ÷ grams per cup
Worked example
One US cup of plain flour weighs about 120 g, so 100 g of flour is 100 ÷ 120 = 0.83 cups. One US cup of granulated sugar is about 198 g and one cup of butter about 227 g.
Questions people ask
How many grams is a cup of flour?
About 120 g per US cup of plain flour when spooned and levelled. Scooped flour can weigh 140 g or more.
Is a cup the same everywhere?
No. A US cup is 236.6 mL and a metric cup 250 mL. Older British recipes sometimes use a 284 mL imperial cup.
